Uncle Curtis Curry 
    
    Ingredients:
  1. 12 Medium Carrots-- Angle Chop
  2. 12 Celery Sticks--Angle Chop
  3. 2 Large Onions--Chopped
  4. 2 Small Yellow Zucchini Squash--Angle Chop
  5. 2 Large Bell Peppers--Chopped--whatever colors you like!
  6. 5 Large Potatoes--Chopped
  7. 2 16 oz Tubs of Tofu--Cubed
  8. 6 Cloves Garlic--Minced
  9. 2 Cups Frozen Peas
  10. 2 13 oz Cans Coconut Milk
  11. 1 1/2 Tablespoons Salt or to Taste.
  12. 2 1/2 Tablespoons Turmeric Powder--can be replaced by Curry powder, maybe 3-4 Tbs.
  13. 2 teaspoons Ginger Powder--or 1 teaspoon + minced fresh raw Ginger.
  14. 1 Large Pinch of Cumin Seed
  15. 2 Quarts of Water
Instructions:
Half of a Large Warm Red Pepper--Opt.  
Start by finely chopping one of the Onions and garlic. Place in a Large Pot/Saucepan and add 3 Tablespoons of Coconut oil and saute until they start looking clear and smell amazing! Meanwhile, Chop the rest of your vegetables. When your Onions and Garlic are ready add in your water, potatoes and Carrots. Bring to a simmer and add the Celery, Peppers, Onion, Squash and Salt and simmer/keep hot without boiling hard, stirring now and then for about 15 min or so, then add in the Tofu, Coconut Milk, Warm Red Pepper and Seasonings and continue until the potatoes soften. Turn off the stove and serve with Rice, Soba Noodles, try out your own thing, or just enjoy it plain!
