--Tomato Squash Vegi Stew--

Ingredients:

3 Tablespoons Coconut Oil.
12 Cups Cubed Zucchini.
4 Cups Chpped Green Beens.
5 Large Carrots Chopped.
6 Cups Tomato Sause, fresh Tomatoes Chopped etc. (I prefer a mixture of both.)
1 Large Onion Chopped.
6 Cloves Garlic.
4 Tablespoons Dried Cilantro, or you could use fresh.
2 Tablespoons Turmeric.
1 Tablespoon Cumin.
1 Heaping Tablespoon Salt, or 4 Teaspoons Salt.

Variation:
For a nice variation add:
1 Cup Pitted Olives.
1 or 2 small Large Eggplants Chopped.
5 Potatoes Chopped.
2 Medium sweet bell Peppers Chopped.

Note:
You can pretty much add any vegetable, as long as they are in the right quantity! Just don't make it too complicated for yourself by adding too many different things! Keep it simple and yummy!

(One of my family members doesn't feel nourished if recipes like such don't include potatoes, so if you are one of those, or just think it a great idea, add some! it won't ruin it!) ( :

Instructions:
Place all of the above in a Saucepan starting with the coconut Oil, and simmer on medium heat till tender, and easy to be poked through with a butter knife. Then serve over rice, millet, or just by itself, whatever you like!
