Vegan Super Granola
Ingredients:
24 Cups Oats.
2 1/2 Tablespoons of Salt.
2 Cups Shredded Coconut.
3 Cups Sugar.
1/2 Cup Whole Flax Seed or Sesame Seed.
2 Cups Coconut Oil. (Melted)
2-2 1/2 Cups Cool Water.
Additional Options:
4 Cups Flour or 4 Cups Quick Oats.
2 Cups Chopped Nuts of your Choice, we used Almonds.
1 Cup Sunflower Seed.
Instructions:
Combine oats, salt, sugar, seeds, flour/oats, and nuts, (if you want them to be baked with your granola, or else you can add the nuts and seeds after.) in a mixing bowl, and stir together. Then add the wet ingredients to it and mix together until a nice somewhat dry crumbly texture is reached. Then place onto some baking sheets about 1 1/2 inches thick, and bake at 350F for about 30 minutes, stirring once or twice in that time. When it is slightly golden remove from the oven and let cool, and fully dry. After it cools you can store it in a bowl or bag for a long time, but our family eats it up fast, so we don't have any problem with it spoiling!
Use it however you would use any other granola, and it you like, before you bake it, you can place it a bake dish some kind or fruit (Peaches, Plums, Apples, Pears etc.) and then use your granola as a Crisp topping and then bake it. We've done this many times and it is delicious! Either way, Enjoy!
