"MUD!"

A Delicious Healthy Dessert/Snack With many Options!


 The story behind the name: We have a joke that goes around in our family and friends, that the different kinds of nuts and seeds are rocks and gravel, and that the carob is dirt and the other ingredients are other things that make mud! It is definitely fun for kids to help make this; they can help add in all kinds of different things to the mixture, and you know how country kids love to play "Mudpies" anyway!!! ;D



     Ingredients:

  • 1/2 Cup Chopped Almonds.
  • 1/2 Cup Chopped Pecans.
  • 1/2 Cup Peanuts.
  • 1/4 Cup Pumpkin Seed.
  • 1/8 Cup Chia seed Opt.
  • 1/6 Cup Sunflower seed.
  • 1/3 Cup Shredded Coconut.
  • About 1/3 to 1/2 Cup Dried Fruit Opt. whatever kinds you like, I used dried cranberries this time.
  • 1/2 Cup Carob Powder.
  • A few pinches of Salt.
  • 1/2 Cup Tahini, and if it is easy for you to get, consider putting another 2 or 3 Tablespoon of it. ( : I think it makes it better!
  • 6 Tablespoons Coconut Oil. (Preferably melted)
  • 1/4 Cup Whatever kind of sweetener that you are comfortable with, I used Sugar because it was what was available to me at the moment, but Honey works really well, maybe even better. Just remember that different sweeteners act and taste different, so feel free to adjust accordingly, you might need to add some more moisture.
  • 2+ Tablespoons water.
  • 1 Cup Cooked Oatmeal Opt. (It makes it not so strong and not so nutty and changes the consistency some.)




NOTE: All nut kinds are Optional, please be creative and put whatever nut and seed kinds you like!!! You also can trade pecans for walnuts etc.
You can also add other nuts or seeds to this; you might just need to add some more Tahini and/or water and/or Coconut Oil with the extra nuts and seeds. We have also done this with other nuts etc. before and it was still good.
Another NOTE: (1) Avocado would be amazing if smashed or blended into this, but I'd say that that is optional.

Directions: 
In a medium bowl combine all ingredients. Stir them together and look for a sort of thick chunky mixture, it will take a little while to get there. When you get there, it should be ready to eat!
You also can freeze it just the way that it is, or you can make it a little more wet, (maybe add some more melted coconut oil, water, tahini, oatmeal etc.) and then place it in some kind of container that is covered with plastic wrap... you don't have to, but it makes it sooo much easier to take out after it's frozen. We call it when it's frozen "Freezer Cookies."
